Bought a 12lb piece of this and split it in two so I could have 2 roasts and a few chops. Each roast is somewhere between 4-5 lbs and I had about 6 chops. I'm going to make one of the roasts today using my tried and true recipe.
1. Marinade the roast with Soya Sauce, chopped garlic and Brown sugar for at least 4 hours, but preferably overnight.
2. Pat dry and use Montreal Steak Spice for a dry rub.
3. Preheat one side of your BBQ to high and once done, sear the roast until it gets some nice grill marks.
4. Move roast to the other side and cook over indirect heat for approximately 1 hour.
5. Let rest for 20 minutes and then slice and serve.
