I was able to snag a nice deal on some Boneless Centre cut Pork Loin chops over the weekend and I split the package in two. I froze one half and kept the other in the fridge until yesterday when I decided to make a nice hearty meal. Today is warm and sunny, but the last two were like a full autumn day. High blustery winds, cloudy and cold. Great day to make some food that sticks to your ribs.
I took 6 chops and pummeled them into submission with my heavy-duty meat tenderizer until they were about a ΒΌ" thick...actually slightly thinner. I coated them with flour, egg and breadcrumbs and set them back in the fridge until I was ready to start cooking. I boiled some Russets and sauteed some onion & garlic and heated up the sauerkraut. I then mashed all of it together using more butter and some milk, plus ground black pepper. They turned out nice and creamy.
Next up was pan-frying the Pork Scallopini for which I used a combo of canola oil & butter on med/med-high heat. You do have to watch the temp and play with your settings a bit, plus add some more oil & butter (but not always) the further you progress. Although I only used 6 chops I ended up with 9 pieces of scallopini, so I pan-fried them in 3 batches.
I was anticipating some leftovers for sandwiches, but no such luck. It was gone in a flash!
