  • Quick Pantry Sauces for Tarting up Meat and/or Fish

    Artichoke Bliss

    1-4 oz. jar marinated artichoke hearts, drained
    1-3 Tbsp. Chicken broth

    Combine ingredients in blender or food processor until smooth. Jazz it up with some diced red peppers, scallions or diced red onion. Probably best over chicken.

    I prefer to see women tarted up vice my food.

      2 TBS Dijon Mustard or perhaps a Grain Mustard.
      1 tsp Crushed garlic (2 cloves?)
      1 TBS Olive Oil
      White Wine to thin (if needed) or to taste.
      S&P to taste

      You want a paste, so not too thin or runny. Play with the ingredients as this is just a guideline.

      Nice dressing for BBQ Salmon Steaks.

        Mae Ploy Sweet Chili Sauce (Thailand, available Whole Foods, Kalustyans, probably Trader Joes)
        Minced ginger to taste
        Minced garlic to taste
        Bragg's Liquid Amino Acids (or soy sauce)
        Fresh lemon juice (1/2 lemon?)
        Toasted sesame oil (just a drizzle)
        Marinate salmon fillet 1 hr approx
        Bake 350 in marinade till opaque (15 mins?)

            Quick BBQ sauce;

            3/4 cup Ketchup
            2 Tb Brown sugar
            1 Tb Vinegar
            1 Tb Worcester or honey depending on what you like
            2 tsp paprika

            Proportions can be changed to taste and vinegar can be regular, wine, cider or even champagne. Can be cooked or not depending on taste. Works with beef and chicken best but not too bad on pork either. Wouldn't recommend fish. If you really want to spice it up use half sriracha (or similar thick hot sauce) in place of ketchup.

                Sriracha is a great suggestion. Learned about using it in a cooking class couple of years ago and it makes a great addition. See if I can dig up a few recipes with it tonight!
